Lunch with Dal, Rice and Veggies

A 400 calorie lunch recipe. A lunch or a dinner ranging between 400 to 500 calories is the optimum range of calories one can intake during a meal. This ensure that you don’t over or under eat.

Ingredients with their calories

  • 50 gms dal (122 cal)

  • 50gms rice(162 cal)

  • 150gms vegetables (30 cal)

  • 10gms  coconut oil (90cal)

 

Recipe

  • Wash the dal and rice till the water is clear.

  • In a pressure cooker put in the rice and dal together along with two green chillies, 2 cloves of garlic, Crystal salt as per taste, a medium sized tomato and a pinch of turmeric.

  • Add sufficient water and pressure cook until done.

  • In a separate pan heat the ten gms of coconut oil. 

  • Add a pinch of mustard seeds, methi seeds, onion seeds, cumin and sprinkle hing.

  • Add 150gms vegetables of your choice.( I took aubergines and okra)

  • Cook on high flame for a minute.

  • Add salt to taste and cover and cook.

  • Once cooked, add dry masalas of your choice.(I added coriander powder, Jere powder, turmeric and red chilli powder)

  • Turn off the flame and let the vegetables rest for a min.

  • In a bowl remove the cooked dal and rice.

  • Top it with the stir fried vegetables.
